Banana Oat Muffins

I didn't even realize I was baking. It dawned on me as I was spooning the batter into the muffin tins. I was like, O hey I guess I'm baking now. I wonder if I bake in my sleep. Anyways, I hope you enjoy this Banana Oat Muffin recipe.



Ingredients:

  • 1 cup Old Fashioned Oats
  • 1 cup Heavy Whipping cream 
  • 1 cup pumpkin pure
  • 2 smashed ripe bananas 
  • 2 eggs
  • 1 tblsp melted butter
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar 
  • 2 tsp vanilla extract
  • 1 1/2 cup all purpose flour
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg 
  • 1/4 tsp all spice
  • 3 tsp baking powder
  • 1/2 tsp baking soda 

Instructions:

Preheat oven to 450 F. Prepare muffin tins by spraying with nonstick spray 

Mix oats with heavy cream and let soak about 1/2 hour 

Mix smashed bananas, pumpkin pure, eggs, sugar, and melted butter tell well combined 

Add in the Oat and cream and mix tell well combined

In a separate bowl mix together all the dry ingredients. 

Fold in dry ingredients into the wet tell just incorporated. Be careful to not over mix or you will have rubber muffins. 

Fill muffin tins to the top. 

Put in oven for 6 min. then turn down the heat to 375 F. 

Bake an additional 15 min. Muffins are done when they spring back from a gentle touch and a fork or toothpick come out clean. 

Let sit in pan for 5 min. then move to cooling rack

If you want to you can add a glaze to the top or just enjoy them as is.

Chris's Birthday Cake

I made a cake for Chris's birthday that encompassed all his favorite desserts. It turned out amazingly good and what it lacked in looks it made up for in tastyness. It's my Twix carmel cheese cake. It contains a gram-cracker crust with brownie, a layer of caramel, cheese cake with cut up Twix bars, and topped off with caramel and chocolate drizzled.




Recipe:

1 box brownie mix
2 eggs
1 package of wrapped caramels 14 oz
1 5oz can evaporated milk
2 8oz packages of cream cheese
12 mini Twix bars
1/2 cup white sugar
1 tsp vanilla extract
1 pie tin with gram-cracker crust

Preheat oven to 350.
Mix up brownies following instructions on the box. Pour half of mix onto gram-cracker crust. The other half of the mix can be used to make regular old brownies.

unwrap the caramels and place them in a pot with the evaporated milk.

Cut up Twix pieces into small bit size pieces.

Mix softened cream cheese, sugar, and vanilla extract. Once mixed add one egg at a time and mix. Then add in Twix pieces.

Put brownie into oven for about 10-15 minutes.
While it's cooking bring caramels to a simmer and stir frequently melting the caramels.
Pull brownies out of the oven and add a layer of caramel then add cream cheese mix on top of the caramel. Put back in oven for 40 mins.

Once cooked pull out of oven and drizzle remaining caramel on top along with some fudge if you would like. Let cake cool in fridge over night.

Lazy Sunday

This morning I woke up and made some Banana Pancakes. They were delicious! I made them form this recipe http://allrecipes.com/recipe/banana-pancakes-i/detail.aspx I ended up using arrow root instead of baking powder due to not having any baking powder.

I also harvested some cucumbers, spicy bells, and jalapeno peppers.

After taking great pride in my home grown veggies I sat down for some tea by candle light. 




I'm enjoying some nice black fig and lavender tea. Nothing to fancy but a favorite of mine. Today has been a good sunday.

Pumpkins

During this beautiful time of spring I find myself thinking about pumpkins and fall. Spring is great with all the flowers blooming and the fat bumble bees buzzing around. But I cant get my mind off pumpkins and halloween/ fall stuff. Fall is the perfect time for warm beverages and snuggling. My two favorite things. Anyways to tide me over I present to you a collection of warming fall inspired images.
